I love Pinterest. I love pinning new recipes and trying them out on my family. Yes, I actually make a good amount of the stuff I pin into my “Recipes I like or want to try” board. But the real fun for me is when I see a recipe that looks amazing but needs to be paleoified. The fun is in the challenge. I saw a recipe for some sort of pancake that looked amazing, but it contained wheat flour. Sure I could have just substituted almond or coconut flour, but then it would not have been much different from my paleo pancakes recipe. If you know anything about Whole30 then you know that pancakes, paleo or not, are not allowed. Dallas & Melissa (the creators of the Whole30) refer to paleoified treats as Sex With Your Pants On (SWYPO). It sounds kind of silly but if you read the post about it here, you’ll completely understand. According to mirriam-webster.com , an omelet is “beaten eggs cooked without stirring until set and served folded in half.” Since omelets are paleo these delicious and easy banana omelets are not only paleo friendly but also Whole30 compliant too. I hope you like them as much as we all did!
- 6 eggs
- 3 ripe bananas
- 1 tsp vanilla
- 1 tsp cinnamon
- Coconut oil to grease pan
- Mash banana with a potato masher or a fork until smooth consistency. Or use a food processor if you have one.
- Add eggs, vanilla, & cinnamon mixing thoroughly.
- Lightly grease an omelet pan or griddle with coconut oil set to low-medium heat.
- The batter should be thin and will burn on a medium to high heat.
- Cook a few minutes until bubbles start to form-about 1-2 minutes depending on how hot your pan is.
- Gently flip to other side and cook until done.
- Eat as is topped with fresh fruit, or spread almond butter, sunflower seed butter, or any nut butter of choice in a thin layer on top and roll.
I bought a very large spatula just for these omelets. Because they are so thin, they break easily if you make them too large without the appropriate size spatula. I also double the recipe and keep for leftovers in the fridge. We never have enough leftover to freeze, but if you do and find they taste good defrosted please let me know.
