Having a full plate means there is not a lot of time for intricate meals, especially during the work week. The criteria that I use to decide whether or not to post a recipe are pretty simple:
1. Does it taste good?
2. Will my kids eat it?
3. Is it easy & quick to prepare?
4. Does it contain ingredients that are available in a neighborhood grocery store?
I’ve written in the past about how my chest freezer was the first purchase I made after we bought our house. It is my #1 recommendation when asked any questions about transitioning to paleo. Once you begin to eliminate processed foods from your life, you will need more freezer space and much less pantry space. When we remodeled our kitchen last year, I was able to eliminate the pantry shelves in the staircase to our finished basement. I never loved walking past food on my way to our living space, but we had no other place for storage. Now that wall (once repainted) will be adorned with pictures of family and friends because we no longer buy things like breakfast cereal, pasta, rice, etc.
I currently have not only a huge chest freezer, but also 2 full size refrigerators. This allows me the storage space I need to buy in bulk to save money. In addition to buying meat like pork & beef in bulk from our farm Potter Hill, I stock up on nuts, seeds, coconut flour, almond flour, frozen vegetables, and still have plenty of room to store homemade meals, sauces, stocks, and soups/stews. I bought 6 chickens a few weeks ago when Whole Foods had them on sale. I have a great recipe for whole chicken in a Crock Pot that is a weekly staple in my house. We also devote an entire section of the blog to freezer friendly recipes.
What I love about this recipe is that it meets all the criteria above. I wasn’t sure if my kids would eat this when I first made it so I actually made them a separate dinner (which I never usually do) of chicken and homemade pesto. Imagine my delight when after taking their one tasting bite that both kids ditched their pesto for the chicken casserole! That will teach me to make a separate meal 🙂
I usually make this with leftover rotisserie chicken, but you can certainly make it with fresh chicken. I would cut the chicken into cubes and sauté it in some bacon fat or coconut oil until fully cooked first, and then follow the recipe as written.
Fast, easy, and yummy-everything you need for a quick dinner!
Rotisserie Chicken Salad Casserole
½ diced onion
½ cup sliced almonds
½ tsp salt
¼ tsp pepper
¼ tsp paprika
2 tbsp lemon juice
½- ¾ cup paleo mayo
2/3 cup broken plantain chips (or potato chips for a real treat!)
Mix all ingredients except plantain/potato chips into a large bowl. Pour into a shallow greased casserole dish. Bake uncovered at 375°F for 15 minutes.
Remove from oven & sprinkle plantain chips on top. Return to oven and cook an addition 5-10 minutes, or until chips begin to brown slightly.
